Chef Jake Dryan has been dedicating each week to a particular state in India, cooking classic dishes from across the country. From Tamil Nadu, Karnataka, Gujarat, Rajasthan, Punjab, West Bengal, to Odisha, he has covered them all. Jake recently observed Sindhi week, and he ended it with a delicious plate of Dal Pakwan. The home-cook shared that when he tried the chana dal, it “blew” him away. In his Instagram Reels, he shared the process of making Dal Pakwan. The clip has garnered over 1 million views. Here is Jake Dryan’s “most simple version” of Dal Pakwan:

Step 1: Place soaked chana dal, green chilli, turmeric, salt, and water in a pressure cooker. Once the pulses are cooked, proceed to the dough preparation.
Step 2: Knead the refined flour with some salt and water. Roll out some puris and fry them in hot oil. Step 3: For the sauce, blend soaked tamarind and strain it to remove unwanted lumps, seeds, and other solids.
Step 4: Lastly, prepare the fried green chillies. Heat oil in a pan, add red chilli powder, and toss the green chillies in the mixture.

In another snippet, Jake showcased his delicious spread. He poured some steamed dal, added tamarind sauce, followed by chopped onions and coriander leaves. He served it with fried pooris and green chilies.
