Start by washing and boiling the potatoes. Once done, cut them into bite-sized cubes.

Note: Make sure to keep 8-9 cubes for later use. Mash these cubes with the help of a fork and set them aside. This mash will help in making the gravy smooth.

Now, add curry leaves, cumin seeds, mustard seeds, heeng, and green chillies to a pan of heated oil. Allow them to splutter. Once done, add the cubed potatoes, garlic, and seasonings (salt, sugar, and turmeric powder), and stir well. Cook for 3 to 4 minutes.
