The recipe was shared on the Instagram page of the restaurant and then reshared by Priyanka Chopra on her Instagram stories. “This fresh summer salad is packed with seasonal veggies and finished with a bright citrus mint dressing,” read the description to the post.

Ingredients:

For the salad:

  • 4-6 cups spring greens, rinsed and chopped
  • 1 cup asparagus tips, chopped
  • 1 cup fresh English peas
  • 1 watermelon Radish, halved and thinly sliced
  • 1/2 avocado, sliced
  • 1/2 cup Feta cheese crumbles

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp fresh mint, minced
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper

Method:

  1. Combine all salad ingredients in a large serving bowl.
  2. Whisk together the salad dressing ingredients.
  3. Pour dressing over salad and toss until fully incorporated.
  4. Top with grilled chicken or an additional avocado if desired.
  5. Serve immediately and enjoy!
