How To Make Dhaba-Style Chana Dal Fry – Recipe By Chef Kunal Kapur
Dal is a staple dish in most Indian households. While there are plenty of things that we cook on a daily basis – nothing defines comfort best than a humble bowl of dal. Don’t you agree? It is flavourful, versatile and packed with several nutrients. However, what really helps in enhancing its flavour is the tadka. So, if you want to add an extra layer of flavour to your dal, Chef Kunal Kapur’s dhaba-style chana dal fry recipe is just for you. A classic chana dal recipe made with split and hulled chickpeas and a double tempering. The crackling tadka makes this dal taste absolutely delicious. Pair it with chapati or paratha and you’re good to go.

Chef Kunal Kapur took to his Instagram to share the recipe and wrote alongside, “Dhaba-style chana dal fry is everyone’s favourite. It’s really an authentic Indian recipe. It’s not like your regular dal; it’s got some bold flavour from tempering which gives that really yummy taste to it. It’s easy to make and very tasty.” Let’s take a look at the recipe:
Dhaba-Style Chana Dal Fry Recipe: How To Make Dhaba-Style Chana Dal Fry
Ingredients:
- Chana dal (boiled) – 3 cups
- Water – 2 cups
For tempering:
- Ghee – 2 tbsp
- Heeng – 1/2 tsp
- Dry red chilli – 2 nos
- Cumin – 1 tsp
- Garlic, chopped – 1 tbsp
- Green chilli, slit – 2 nos
- Onion, chopped – 1/4 cup
- Ginger, chopped – 2 tsp
- Turmeric – 1/2 tsp
- Chilli powder – 1/2 tsp
- Tomato, chopped – 1/4 cup
- Salt
- Coriander, chopped
- Lemon wedge – 1 no
For second tempering:
- Ghee – 1 tbsp
- Chilli powder – 1/2 tsp
Method:
- First, heat ghee in a pan and add heeng, dry red chilli and give it a quick stir. Sprinkle cumin. Once it pops, add in chopped garlic and cook till it starts to brown.
- Next, add green chilli with chopped onions. Stir and cook onions for a minute. Add ginger and give a light saute.
- Sprinkle turmeric, chilli powder and stir. Add chopped tomatoes with salt. Cook the tomatoes for 2 mins.
- Add the boiled dal in the pan along with some extra water. Bring to a boil and then simmer for 3 mins approx. Add seasoning, coriander and squeeze a lemon wedge.
- Remove the dal into a bowl. In a fresh pan, heat ghee and chilli powder. Immediately remove from heat, stir and add this tempering over the ready dal. Serve it hot with flatbreads, chapati or paratha.
