Gleneagles Townhouse Is a Grand Yet Intimate New Stay in Edinburgh
That’s not to say it exclusively exudes the ambiance of another era. Gleneagles Townhouse has plenty of modern and modish touches: bathrooms, for example, feature shining rectangular green tile work, while Marshall speakers sit on every nightstand. Much of the art, painted by local Scottish artists, is abstract. The Paskin & Associates-designed rooftop bar Lamplighters (a contemporary concept in itself) has leather petal bar chairs, curved countertops, and biophilic accents with leafy monsteras and mossy green plants whose spindly offshoots drop down from a shelved ceiling.
Then there’s the food: The menu at the Spence, helmed by Jonny Wright, very much overthrows the stereotype of Scottish food as strictly meat-and-potatoes. Instead, it offers biodynamic wines and a variety of dishes infused with global flavors, whether a West Coast crab omelet, a pumpkin and feta filo tart, spicy beef tartare, or a flaming baked Alaska. (Those seeking traditional Scottish fare, however, need not fret—on Sunday, they also serve a classic roast.)
Cocktails, too, are of the avant-garde variety: The Leerie, a concoction composed of tequila, Aperol, coconut, and cranberry, is presented with a mad-scientist bubble over the top that the drinker must pop before indulging. (The name is an homage to the character in the Robert Louis Stevenson poem “The Lamplighter.”)
