The best way to store this chutney is in an airtight container. Keep it in a cool and dark place, as any exposure to light may decrease its shelf life. Additionally, you could also dip the containers in warm water for some time before you transfer the chutney to them. This helps sterilise them. However, make sure to dry it completely as any exposure to moisture can end up ruining your chutney.

To prepare the chutney, heat some oil in a pan. To it, add jeera, curry leaves, coriander seeds, and garlic cloves. Mix well. Add chopped onions and green chillies, and continue to cook until the onions become golden brown in colour.
Next, add chopped tomatoes, haldi, tamarind paste, and salt. Give it a nice mix and saute for 2-3 minutes. Cover the pan and cook the tomatoes until they become soft. Once done, add red chilli powder and fresh coriander leaves. Mix well.

Switch off the flame and allow the mixture to cool down. Then, transfer it to a mixer grinder and blend it into a smooth paste. Now, prepare tadka with oil, mustard seeds, and urad dal. Pour this mixture on top of the chutney and enjoy!
