A New Year’s Eve Champagne Cocktail From Saint Tuesday, New York’s Coolest Subterranean Bar
It’s almost New Year’s Eve—which means champagne is certainly in order. And while you could have a simple glass of bubbly, why not start 2022 off with a champagne cocktail instead?
To that end, Vogue asked Saint Tuesday, a buzzy new bar in TriBeCa, for some inspiration. The hidden hotspot in Cortlandt Alley, tucked away in the cellar of the Walker Hotel, takes cues from the building’s former Victorian-era life as a ribbons and buttons company. Inside, patrons will find richly upholstered booths, tarnished gilded accents, and a well-worn floor. (Tuesday tapped John McCormack Design, the studio behind Maison Premiere and Smith and Mills, for the interiors.) The cocktail menu was dreamed up by Chris Covey, a Milk & Honey alum—for the uninitiated, that’s the bar credited with kicking off the global speakeasy craze—and features a wide array of creations named after city landmarks or places that inspired them.
Covey’s take on a New-Years-Improved champagne cocktail is, he admits, “not for the faint of heart, but is delightful and bright at the same time.” He referenced the standard champagne cocktail—consisting of a bitters-drenched sugar cube topped with champagne—as well as the innovative whiskey drinks on bar menus nowadays. “We take this slow sipper consisting of Cognac, Rye Whiskey, Maraschino Liqueur, Peychaud Bitters and a dash of absinthe, and brighten it up by topping it up with champagne—my favorite to use is a dry rosé champagne, as the base is on the sweeter side.”
