What India’s top chefs are cooking at home this Diwali – Times of India
This Diwali we spoke to the top chefs from across the country to know what these stalwarts in the culinary arena prepare in their homes on Diwali.
Shipra Khanna, TV host, Author, Celebrity Chef: Diwali is the best time to celebrate with family and friends and I love to make traditional Indian sweets. I have been preparing Besan ki Barfi, Dry Fruit Laddoo and a lot of snacks with my mother which we can enjoy during the festival.
Suvir Saran, Michelin Star Indian/American Chef, Author: In our home in New York, I made Matki Ki Dal, which I got placed into the matki early morning with a whole large lemon thrown in for scent and taste. By the time we would sit down at the table the dal had cooked over 12 hours on a low flame while luxuriating itself with seasonings. With it, I would always have a Kathal Ki Biryani, Mirchi Ka Salan and the most delicious and soul-satisfying Dahi Ki Gujiyas, filled with a roasted spice, fruit and nut paste and tons of ginger and of course a Kachumbar with the ripest tomatoes, red onions, cucumbers, sweet peppers of many different colors, apples, mint, coriander, and lime juice. Of course, there is an abundance of colors, tastes, textures, and heritage that these dishes brought forth.

shish Bhasin, Executive Chef, Leela Gurgaon: This year the plan is to have some fun as me and my daughter are cooking together. We will be making the regular traditional food but with a twist. The things we will be preparing this year include-Malpua Chenna Roll, Black Pepper and Ginger Infused Gurpara, Brown Garlic, Chilli and Parsley Mathri and Orange Baked Rasgullas.
Gagandeep Singh Bedi, Executive Chef, Roseate House New Delhi: We have a tradition of having Chaat for Diwali evenings especially after pooja. Earlier my mother used to make all the delicacies, however, after my hotel management, I took charge. Now, I prepare Chaat, Dahi Bhalla, Papri Chaat, Chai with Methi Matti and Assorted Pakora and for dessert- Atta Gond ke Laddoo.
