This recipe contains a unique ingredient – chana dal – which is added to help bind the mixture better. You first need to wash and soak the dal for a couple of hours. Later cook it with some water and add onion, ginger, garlic, green chillies, cinnamon, cumin seeds and peppercorns. Once the water evaporates, allow it to cool and then grind to form a coarse paste.
Next, combine this paste with mashed potatoes, grated cheese and salt. Make a slurry by mixing corn flour, water, milk, salt, nutmeg powder and pepper powder. Keep it ready. Carefully make cylindrical shapes of the prepared aloo mixture. Roll each shape in breadcrumbs, then dip them in the cornflour slurry and roll them in the breadcrumbs again. Deep fry the croquettes until golden brown and serve hot.
